Haruta-Kyokuto (清) Series is made with a V Gold core steel which then has 67-layers of steel composite folded and forged over the top. It has a stableness of 60+1HRC and is extremely hard, tough, and resistant to rust.

Using Japanese steel the performance, hardness, and sharpness are unbelievable to experience. Along with a beautiful finish to the blades and a gorgeous Oval shape, the Haruta range has a pakkawood handle to truly compliment the seamless finish.

The range covers a superb selection of Japanese knives essential to any kitchen.

Each knife comes with a beautiful solid wood scabbard/sheath for safety.

Knives available are as follows:

  • Our impressive SGS Swiss authoritative testing ensures the product's metal content reaches the perfect standard.
  • Ruthlessly sharp, scalpel-like edge is hand-finished to a mirror polish within a staggering 15° degree angle. The knives are forged with 3.5mm thick steel. A forging process where the blade body is gradually thinned from 2.5mm to 1.7mm, which achieves extreme sharpness and a comfortable weight to the blade.
  • Nitrogen-cooled for enhanced hardness, flexibility, and corrosion resistance.
  • Featuring an exquisite, Feather blade pattern, for striking, stand-out beauty.
  • A precisely tapered blade minimises surface resistance for buttery smooth cut through.
  • The bolster provides a perfectly engineered balance and gently encourages a comfortable and proper pinch grip.
  • Meticulously constructed, ultra-premium pakkawood handle that is highly impervious to heat, cold, and moisture with military-grade strength and life-long durability.
  • Ergonomic handle shape for superior hand control, agility, and comfort.
  • Hidden tang for superb robustness and quality.
  • Tested to meet razor-sharp standards below 100N (the average kitchen knife test has a sharpness of 210N).

Damascus blades are made from high-carbon steel with small amounts of chromium in the alloy. While high in carbon steel, the blade can show rust if not cared for. You should ensure to keep the blades clean and dry thoroughly to avoid rust or staining. Hand wash only. The blade pattern is more subtle in natural light: photographs are adjusted to emphasise the blade pattern.

We recommend using a whetstone to sharpen your knives.

We have a range on our website and also have some articles on our blog, which talk you through the best way to look after and sharpen your knives, including recommended angles, etc

Knives should never go in the dishwasher. Dishwasher detergent is very abrasive, and along with the banging around that happens during a wash cycle, will take the sharp edge right off your knife. The high heat can also damage the handle or misshape them. Always wash knives by hand in the sink with dish soap and water and dry after.

If for any reason you are not completely satisfied with your purchase, within 30 days of placing your order, we will refund you for your purchase with no questions asked.

Precision Peeling and Detailing

Essential for detailed work, the paring knife's small blade is perfect for tasks requiring accuracy, like hulling strawberries or creating garnishes. Its sharp point is ideal for piercing and its fine edge excels in slicing and peeling fruits and vegetables.

The Everyday Go-To Cutter

This knife bridges the gap between a chef's knife and a paring knife.
Its versatility makes it excellent for intermediate-sized tasks, such as trimming meat, slicing cheese, or cutting sandwiches. Its smaller size offers greater control for precision tasks.

Precision Vegetable Cutter

This knife is another vegetable specialist, excelling in making straight cuts. Its design is particularly suited for up-and-down chopping motions, ideal for quickly processing large quantities of vegetables with uniformity.

The Versatile Chef's Companion

This chef's knife is a staple in both professional and home kitchens. Its balanced weight distribution and sharp edge make it ideal for various tasks, from mincing herbs to cutting meat. The blade's length and curve allow for efficient rocking motions during chopping, making it a go-to knife for everyday cooking.

Ultimate Vegetable Precision

This knife is a powerhouse for vegetable chopping. The wide, straight blade is perfect for making clean cuts through vegetables and fruits, ensuring uniform slices. Its ample surface area also makes it convenient for scooping up chopped items.

Precision Slicing Artistry

Traditionally a symbol of expertise in Japanese kitchens, the Kiritsuke is known for its versatility. Its unique shape, combining features of a chef's knife and a vegetable knife, makes it excellent for precision tasks like julienne cuts. The angled tip is particularly useful for intricate work like filleting fish.

The Expert's Choice for Filleting

The narrow and flexible blade of this boning knife is tailored for separating meat from bone and skin. Its flexibility allows for precise control, making it an excellent tool for preparing fish, poultry, and meat with minimal waste.

The Perfect Slicer for Crusty Loaves

Beyond bread, this knife is excellent for foods with a hard crust or skin. The serrated edge slices through without crushing, making it ideal for pastries, fruits with tough skins, and even layer cakes.

The Multipurpose Maestro

The word 'Santoku' translates to 'three virtues', signifying its proficiency in slicing, dicing, and mincing. The hollow-edge design reduces drag and prevents food from sticking to the blade, enhancing its efficiency. This knife is a must-have for cooks who value precision and ease.

Essential Blade Maintenance Tool

While not a knife, this tool is crucial for maintaining the sharpness and longevity of your knife set. Regular honing with the steel ensures the knives perform at their best, providing clean and precise cuts.

Haruta

This knife is one of the comfortable knives I have used. I use it 6hours a day 5 days a week. I sharpen it every Monday at the edge lasts the week. The delivery time was rather long but I must say worth the wait. Just order in good time as it took around 3 weeks to arrive! But we’ll worth the wait.
